The Mosque of Ibn Tulun, finished in 879, is the oldest in the country to keep its original form, with a vast arcaded courtyard and a spiral minaret you can climb. Al-Azhar, founded in 970, grew into one of the oldest centres of learning in the world, and the Fatimid Al-Hakim and the small, finely carved Al-Aqmar stand on al-Muizz Street. In Alexandria, Abu al-Abbas al-Mursi honours a Sufi master from Andalusia. Visitors are welcome between prayers, but avoid Friday noon and tip the shoe attendant.
